By the way, I completely agree with what Shallots is saying about overhead! People just don’t understand that issue, and often blame the cost on the Masgiach, the Kosher Meat, or the CRC/OU. I know people who mistakenly think that the CRC & OU are like a Mafia, and that they charge tens of thousands of dollars. The fact is that the Kashrut agencies are not for profit organizations which provide an incredible community service.
That all being said, I want to clarify things about the cost of Tein Li Chow’s chicken wings.
We usually charge $7.99 for a package which has a weight of approximately 1.75 LBS. This makes them around $4.56 for 1 LB. We often put them on sale (like this week), and they go down to $4.99, which makes them $2.85 for 1LB. We also sell crispy wings for $3.50, and $1.99 (when they are on sale) for 6 big pieces. Additionally our wings are massive, and made from 5# chickens, where as other restaurants use 3½ LB chickens. Thus we deliver a significantly better and cheaper product in that category.
Compare that to what Shallots serves, 7 tiny chicken wings for $8, and more if you want a sauce or glaze.
The reason why their prices are so high in comparison, is because they have a huge beautiful facility with a huge expensive kitchen, and a large professional weight staff. When you purchase wings from Tein Li Chow, it doesn’t come with a table, a pristine table cloth, candles, a glass of ice water, and a waiter. However, in the end we are probably both attaining roughly the same profit margin.
